Responsibility
NFPA 96 Fire Code 4.1.5 states:
“The responsibility for inspection, maintenance, and cleanliness of the ventilation control and fire protection of the commercial cooking operations shall ultimately be that of the owner of the system, provided that this responsibility has not been transferred in written form to a management company, tenant, or other party.”
Our kitchen exhaust system cleaning process
We will meet with the site manager and do a walk-through explaining the cleaning process also identifying any concerns.
A technician will go to the roof shut off fans, check fan belt replace if necessary, listen to the motor bearings for irregularities, check airflow (draw) to make sure adequate ventilation.
Kitchen appliances wrapped in plastic find all electrical outlets to protect, remove grease filters scrap chisel excessive grease build up.
The entire up-blast fan will then be cleaned including the fan blades, back of the fan blades, the air band (bowl).
Vertical-horizontal ductwork will then be cleaned with foaming degreaser to cut grease.
The entire Kitchen Exhaust System will be chemical sprayed soaked for 15 -20 minutes, then hot steam cleaned to remove all grease, chemicals, to the bare metal.
The inside exterior of the kitchen exhaust system will be hand polished, filters grease catchers will be re-installed, kitchen exhaust fan turned back on.
